Creamy Cucumber Yogurt Dip

A cool, garlicky yogurt dip for veggie sticks, pita, grain bowls, or dinner straight off the grill. Make it ahead so the cucumber, garlic, and dill have time to mingle.

Creamy Cucumber Yogurt Dip

Ingredients

  • 2 cups plain Greek yogurt
  • 1 cup grated cucumber squeezed dry
  • 2 cloves garlic finely minced
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon lemon juice or to taste
  • 1/4 teaspoon salt or to taste
  • 1/8 teaspoon black pepper

Method

  1. Grate the cucumber, then squeeze it in a clean kitchen towel or fine-mesh strainer to remove excess water.
  2. Stir the yogurt, cucumber, garlic, dill, lemon juice, salt, and pepper together in a bowl.
  3. Cover and refrigerate for about 1 hour. Stir, taste, and adjust the lemon and seasoning before serving.

Make it work for dinner

Serve with roasted vegetables, potato tacos, pita, or a simple rice bowl. Keep crunchy accompaniments separate until serving.
