Instant Pot Maple Butter and Sweet Potatoes in Under 15 Minutes

I learned about this a long time ago in a restaurant I used to work at in San Diego, California. To say these are delicious is an understatement. Sweet Potatoes are packed with the nutrients and phytochemicals our bodies need to function, and what better way to get those nutrients than slathered in this delicious Maple Butter? This Maple Butter really goes the extra mile in flavor and if you’re like me, you will want to drown your sweet potatoes in it. The best part is, simplicity! This can all be on your table in under 15 minutes!

  

You will put the butter in the Jar, I used an 8 ounce Quilted Ball Mason Jar, Pour some syrup over it, I eyeballed it but you will want to use about 1/4 to 1/2 cup per stick of butter. In the Instant Pot, you will put 1 cup of water and set the jar in on keep warm mode for 15-25 minutes, or put it on saute for a couple of minutes, keeping a close eye on it so it doesn’t bubble too hard, once it comes to a boil, switch to keep warm mode until the butter is melted.

You will want to stir often to combine everything, and it’s also easier to just put the lid on as its cooling and shake it a few times so that the maple and butter don’t separate as they cool. This butter keeps wonderfully in the fridge, but can also be frozen for longer periods of time. Next up are the super easy Sweet Potatoes!

How to Cook Sweet Potatoes in the Instant Pot:

Rinse and Scrub the sweet potatoes and place in the Instant Pot with OR without a trivet. Pour in 1 cup of water, and set to Manual (high) for 7-12 minutes depending on size. Let the pressure release naturally after the cooking cycle is finished. Typically I do 10 minutes without the trivet, these ones were fairly large so I did 12 minutes.

Maple Butter: 1 Stick of Butter, 3 ounces of Maple Syrup, Mason Jar. Put the ingredients into the mason jar and set Instant Pot to Saute mode. Stirring often until well combined. NOTE: For a dairy-free version of this maple butter, this is delicious with coconut oil as a substitute for the butter.
